Steamed Caramel and Chocolate Cakes

This cake is a cross between a souffle and a fondant. Slightly moist and at the same time airy structure and rich chocolate flavor. It is very difficult to find the strength to stop and not eat another bite. It is prepared very quickly, from the series "guests on the doorstep", especially if you cook from one type of chocolate.

Ingredients

  • for caramel cake (6 servings):
  • 4 eggs
  • 200 gr. flour
  • 120 gr. Sahara
  • ¼ tsp vanillin
  • 2 tbsp boiled condensed milk / or diets option - 2 tbsp. finished caramel pudding
  • for chocolate cake (6 servings):
  • 4 eggs
  • 200 gr. flour
  • 120 gr. Sahara
  • ¼ tsp vanillin
  • 50 gr dark chocolate / or diets option - 2 tbsp. finished chocolate pudding or yogurt
  • for impregnation (for 6 servings):
  • ½ lemon or 1/3 orange juice
  • 1,5 - 2 tbsp Sahara
  • / or orange or lemon liquor
  • / or diets option - orange or lemon fructose syrup (for diabetics)
  • for caramel cream (6 servings):
  • 3 tbsp boiled condensed milk
  • 4 tbsp sour cream
  • 3 tbsp dry cream or milk powder
  • / or diet option - ready-made caramel pudding
  • for chocolate cream (6 servings):
  • 100 gr. dark chocolate
  • 4 tbsp sour cream
  • 3 tbsp dry cream or milk powder
  • / or diet option - ready-made chocolate pudding
  • / or any other favorite pudding or yogurt

Step by step recipe

For chocolate cake, melt the chocolate in an open double boiler in a rice bowl or in another convenient way.

Add the rest of the dough ingredients to the beaten eggs and mix well.

Divide the dough into 6 six equal parts and put in forms. Cover the molds tightly with foil.

Cook in a double boiler for 40 minutes. If you use immediately 2 compartments of a double boiler 20 minutes after the start of cooking, swap them.

Cooking impregnation. Combine the juice with sugar and mix well. Put on fire and, stirring constantly, bring to a boil. Cool.

Cooking caramel cream. Combine all the ingredients for the cream and mix well.

Cooking chocolate cream. Melt the chocolate in an open double boiler in a rice bowl or in another convenient way. Combine all the ingredients for the cream and mix well.

We collect cakes. Soak the prepared hot caramel cakes with orange syrup. Cover with caramel cream. Soak the finished hot chocolate cakes with lemon syrup. Cover with chocolate cream.

Leave the cakes to cool to room temperature.

Cooking in steps:

To prepare these simple and tasty muffins for a couple, take wheat flour (preferably premium), milk, granulated sugar, medium-sized chicken egg, unsweetened cocoa powder, baking powder and a pinch of vanillin for flavor (you can replace with a teaspoon of vanilla sugar).

Before you start making dough for muffins, you need to prepare a double boiler in advance. In my case, this is a slow cooker with a Steam cooker mode. Pour 300-350 milliliters of cold water into the container and turn on the Steam cooker program. If you pour boiling water, you can turn on the double boiler when the dough has already been prepared. Let the water boil, and for now, we will break one chicken egg into a bowl, to which we add sugar and a pinch of vanillin.

Beat everything with a whisk (5 minutes) or a mixer (enough for a couple of minutes) until a dense and dense mass is formed. Sugar crystals should practically dissolve. Pour milk of room temperature there and mix everything.

Pour sifted wheat flour into the egg-milk mixture, which must first be mixed with the baking powder.

Mix everything to make a smooth and uniform dough for muffins (consistency of sour cream of medium fat content).

We measure half of the dough and transfer it to a separate dish. Add cocoa powder.

Mix everything thoroughly - you should get chocolate dough (outwardly like melted chocolate).

Now we will lay out the dough on baking molds. Either oil them or insert paper capsules. In turn, we begin to spread in each mold a teaspoon of dough. First I put the chocolate.

Then a spoonful of white muffin dough.

And so you need to fill out the forms 2/3 or a little more.

We rearrange the molds with the dough in a special insert for cooking food for a couple.

Cook on Steam Cooker for 25 minutes. I got 10 cupcakes per pair from the indicated amount of ingredients. I cooked them in two stages of 5 pieces (each time for 25 minutes).

Let the steamed cupcakes cool down and you can see what happened. You see, on a section almost a zebra. Very simple, but at the same time tender, tasty and fragrant homemade cakes. But I still achieve (or finish?) Mine - my cupcakes will eventually open!
